Taleggio originates from Val Taleggio in Lombardy, perhaps as early as the 11th century. Though we at The Cheese Shop fondly refer to as an “Italian Brie,” it is not a Brie at all but rather an amazing washed-rind cheese that, for its category, is relatively mild in both flavor & aroma. A healthy Taleggio has molds mottling the reddish-hued rind so do not be alarmed, this means it is not an industrial-made version. The bone-colored paste is semi-soft, becoming more bulgy than runny at room temperature. The meaty & nutty flavor can pair well with a full-bodied red wine & crusty bread.
