Italy’s version of feta, this rindless sheep’s milk cheese is a staple in Sicily adorning practically every dish. Ricotta Salata, a cheese made from whey, is named for the process by which it’s made rather than denoting a specific cheese: it simply means recooked (“ricotta”) & salted (“salata”). Its flavor is mildly nutty with wonderful milky sweet notes. The texture is dense, smooth & spongy yet firm enough to grate—a nice alternative to Romano.
