Denmark is known for many cheeses (Havarti, Fontina to name a couple) with a cheesemaking history that may go back as far as the Vikings in the 8th century. But with modernization & technology, Denmark’s cheeses were also industrialized causing them to lose that artisanal essence. Mycella Blue is recapturing that handcrafted flavor by being created in smaller batches & using traditional methods. Cave aged beneath the creamery, Mycella blue can be considered creamier & sweeter than most other blues, slightly salty though well balanced by not being overly robust.
