With a strongly aromatic pungency, Limburger’s reputation precedes it. But this washed-rind, semi-soft cheese is actually much milder in flavor than smell, a characteristic of most washed-rind cheeses. A cousin of Liederkranz, it originated in the Duchy of Limburg (divided presently between Netherlands, Belgium & Germany) around the late 19th century. Our brand comes out of Wisconsin from Little Sugar Valley, part of the Chalet Cheese co-op in Monroe & the only producers of domestic Limburger. Pair it with a full-bodied stout or hoppy local brew, some dark or rye bread with brown mustard—oh, & don’t forget the sliced raw onion!
