Hailing from Lombardy & known as Stracchino di Gorgonzola in Italy, Gorgonzola is one of the best-known cheeses in the world. As with many cheeses, it has a story for its inception. Moving their herds to & from seasonal pastures, herdsmen would stop in the town of Gorgonzola to let their tired cattle rest & carry out a much needed milking. Flooding the town with more milk than they could drink, wheels of non-blued cheese were made with the extra milk. At some point, a Penicillium mold was accidentally discovered on one of the “Gorgonzola” wheels & Italy’s most famous blue was born. At The Cheese Shop, we carry both styles of Gorgonzola—the Dolce is a softer, creamier, milder style of Northern Italy’s beloved cheese. It presents with a lovely ivory paste & greenish-blue mold striations.
