The Chimay cheeses are an amazing artisanal, semi-firm, washed-rind cheese made by the Trappist monks at the Abbey of Notre Dame de Scourmont since 1876. We carry at least one of three (out of four produced by the monks) styles almost throughout the year, depending on availability. Grand Classic, Grand Cru & Biere all have a tight, smooth paste & mild flavor contrasted with a crunchy full-flavored rind. The various styles vary in intensity slightly but they are all a symphony of perfection & pleasant pungency.
