Aged: 8-10 days
Named after an ancient breed of goat, brunet is a delicate gift! It is made with pasteurized goats' milk from the Piedmont region of Italy. It retains it's goaty tang, and in aging, picks up flavors of sweet straw and toasted sesame. It boasts a soft bloomy rind, almost too delicate to remove, ivory paste smelling of mushrooms and creme fraiche and a mouth-feel of pure silk.
